The single most useful thing to know before you read any further: a fridge does not hold one steady temperature, and it is not meant to. It cools until it overshoots its target, switches off, drifts back up, and starts again. On top of that, every frost-free fridge deliberately warms its own cooling coil several times a day to melt the frost off it. During that period the cabinet gets a little warmer, and the display may show it.
So a temperature that moves around is the normal condition. What you are actually trying to work out is whether the movement is bigger, longer or stranger than it should be — and whether the setting you chose is changing, which is a different problem altogether.
Delhi supplies two extra causes that most guides written elsewhere never mention. Supply voltage here can sag and surge hard enough to reset a control board, which can drop a fridge back to its factory setting without anyone touching it. And the ambient temperature in an unairconditioned kitchen can swing enormously between a 45°C afternoon and a much cooler night, which changes how the fridge behaves at each end of the day.

What to check yourself first, in order
All free except the last, which needs an inexpensive thermometer and is worth it if this has been going on for a while.
- 1. Decide what is actually changing. There are two different complaints hiding under one sentence. Is the displayed or measured temperature moving while your setting stays put? Or is the setting itself changing, so the panel now reads a number you never chose? The second is a much shorter list of causes, covered below.
- 2. Write down what you see, with times. Note the reading morning, afternoon and night for two days, and note what was happening: a big shop loaded, the door open for a while, a power cut, a hot afternoon. Patterns show up fast and they usually name the cause.
- 3. Check the load and the airflow. A nearly empty fridge swings much more than a well-stocked one, because there is little cold mass to hold steady. A fridge packed solid swings too, because air cannot circulate and some spots go cold while others stay warm. Check nothing is blocking the vents at the back of the fresh-food compartment.
- 4. Check where the fridge is standing. A clear gap behind and above it, out of direct afternoon sun, and away from the stove. A fridge cornered in a tight kitchen alcove in June is fighting a losing battle every afternoon.
- 5. Check the door and the seal. A gasket that no longer grips lets warm air in continuously, which makes the temperature wander and the compressor run on. Do the currency-note test at several points as described in why your fridge door is not sealing.
- 6. Put a thermometer inside. A small fridge thermometer costs very little and it is the only way to separate a real temperature problem from a display problem. Stand it in a glass of water on a middle shelf, leave it overnight, and read it in the morning. Water evens out the short swings and gives you the temperature the food is actually experiencing, which is the number that matters.

Yes, if it is a frost-free model, and this explains most of the normal wandering. A frost-free fridge has a heater sitting next to its cooling coil. Every so often, the fridge stops cooling and switches that heater on for a while to melt the frost that has built up on the coil. The meltwater runs down a pipe into a tray near the compressor and evaporates away.
During a defrost cycle the fridge is, briefly, not a fridge. So:
- The temperature rises a little, then comes back down. A short rise of a few degrees at the end of a defrost cycle is normal. Some models freeze the display during the cycle so you never see it; others show the real reading, which is why one brand seems to wander and another does not.
- The fridge goes quiet, then suddenly noisy. Cooling stops, then restarts and runs hard to recover. If you have been hearing a cycle of silence followed by a strong run, that is usually this.
- You may hear ticking, cracking or a hiss. Water dripping onto a warm surface and plastic parts expanding and contracting. Harmless. If the noise is something else entirely, why your fridge is making noise sorts the normal sounds from the ones worth calling about.
- A little water appears and then goes. Meltwater is the point of the cycle. Water that stays, or that pools under the vegetable drawer, means the defrost drain is blocked — see water collecting inside your fridge.
When the defrost system itself is the fault. If the heater, timer or sensor fails, frost stops being cleared and builds into a sheet on the back wall. That sheet blocks the vents, so the freezer stays cold while the fridge compartment goes warm, and the temperature you see swings widely with no obvious pattern. The giveaway is visible heavy frost, and the temporary clue is that manually defrosting the whole fridge restores normal behaviour for a few days before it returns. Thermostat drift, sensors, and a fridge that is cooling too much
If the swing is genuinely too large and it is not the defrost cycle, the part that measures temperature is the next suspect. A fridge only knows how cold it is because a sensor tells it, and sensors age.
- A mechanical thermostat drifting. Simpler fridges use a mechanical thermostat, a dial with numbers. Over the years its calibration wanders, so position four no longer means what it once did. The classic symptom is a fridge that has slowly become far too cold, freezing the milk and the vegetables at a setting that used to be fine, or one that alternates between freezing things and barely cooling. Try a different dial position and give it a full day to settle, then read your thermometer. If no position gives a sensible result, the thermostat is done.
- An electronic sensor reading wrong. Fridges with a digital panel use one or more small sensors. A failing one makes the fridge act on a wrong number, so it may over-cool, under-cool, or defrost at the wrong times. The tell is a mismatch: the display says one thing and your thermometer in a glass of water says something clearly different. That mismatch is the single most useful piece of evidence you can hand a technician.
- A sensor in the wrong place, or buried. On some models the sensing element sits behind a small cover on the back or side wall of the compartment. If it is iced over, or if a container is jammed hard against it, the fridge reads that spot rather than the cabinet. Keep a small gap around it.
- The fan. A circulation fan that has slowed or stopped means the cold does not reach the whole cabinet. You then get one very cold zone near the vent and warmer areas further away, and a reading that changes depending on where you measure. Open the door and listen: on most models the fan runs while the door is shut and stops when you open it, so you may need to press the door switch by hand to hear it.
- Cooling too much for a simple reason. Before assuming a fault, check the obvious: a setting turned too high, a fridge running nearly empty, a vent blocked by a container so freezing air blows straight onto one shelf, and a fresh-food compartment set very cold to compensate for a freezer complaint. These explain a lot of over-cooling complaints.
None of the internal sensors, fans or thermostats are DIY replacements. They sit behind panels with wiring, and on some models next to the sealed cooling circuit, which is professional work under all circumstances.
Fridge settings changing on their own: panel locks and voltage
If the number you set has changed by itself, this is the section you want. A temperature that moves is one problem; a setting that moves is a much shorter list.
- Somebody changed it. Not a joke — touch panels on the front of a fridge are at exactly the height of a child, and they respond to a light press. So does a wet cloth during cleaning, a bag brushing past, or a hand steadying the door. If the setting changes at unpredictable times, this is the first thing to eliminate.
- The control lock is off. Nearly every fridge with a digital panel has a control lock or child lock, usually a press-and-hold on one button for a few seconds. Turning it on is the complete fix for accidental changes, and it is the most under-used feature on the appliance. The manual names the button; so does the printing on the panel on many models.
- A power cut or a surge reset the electronics. This is the Delhi one. When supply drops and returns, a control board can restart, and some models come back on a default setting rather than the one you chose. If your setting has reverted to something like a middle value after an outage, that is what happened. Set it again and note whether it survives the next cut.
- Voltage fluctuation on its own. Even without a full cut, a deep sag or a spike can disturb the electronics, and repeated events shorten the life of the control board. A fridge whose settings keep resetting, whose display flickers, or that behaves oddly at the same times of day as the rest of the neighbourhood is telling you about your supply. - A special mode is running. Many fridges have a fast-cool, fast-freeze, holiday or eco mode, and some switch themselves off again after a set number of hours, which looks exactly like the setting changing on its own. Check whether an extra icon is lit on the panel.
- Damp behind the panel. A monsoon month plus a fridge in a humid kitchen can leave moisture where the touch panel electronics live, which produces phantom presses. If the panel behaves oddly only in the wet season, mention that when you book.
A 45 degree afternoon, a cool night, and when to call someone
Every fridge is rated to work within a range of room temperatures, and a Delhi kitchen spends part of the year outside the comfortable middle of it. The fridge does not create cold; it moves heat from inside the cabinet to the room. The hotter the room, the harder that is.
- Afternoon versus night. On a day that hits 45°C in the afternoon and falls a long way by dawn, the same fridge on the same setting will run almost continuously in the afternoon and rest for long stretches at night. A cabinet that measures slightly warmer in the afternoon and slightly colder before dawn is behaving correctly. This alone explains a great many complaints of a temperature that changes by itself.
- Winter can do the opposite. A fridge standing in an unheated kitchen on a cold January night may barely run at all, and on some designs that means the freezer suffers because the fridge compartment rarely calls for cooling.
- Placement decides how bad it gets. Direct afternoon sun, no gap behind, a tight alcove, or a position next to the stove all push the fridge over the edge on the hottest days. A clear gap and a shaded spot are free improvements.
- Dust on the condenser coils. The coils at the back are how the heat leaves. In a dusty Delhi flat they clog, the fridge loses efficiency exactly when it needs it most, and the temperature starts to wander on hot days. Call a technician when: your thermometer disagrees clearly with the display; food is freezing at a normal setting or spoiling early; the swing is large and does not follow the defrost cycle or the time of day; heavy frost keeps rebuilding on the back wall after you defrost it; the setting resets even without a power cut; the panel flickers or shows a code; or the fridge alarms and will not clear, which is covered in why your fridge is beeping.
What to tell them when you book: brand and full model number from the sticker inside the door; whether it is single door, double door, bottom-mount or side-by-side; your written log of readings with times; what your thermometer says versus what the display says; whether the setting itself changes or only the temperature; whether it started after a power cut or a surge; whether there is frost on the back wall; and what you have already ruled out. Ask for the diagnosis before the quote, ask for the part and the labour as separate lines, never pay an advance, and pay directly once it is holding temperature.
